Hailing from San Francisco I have a deep appreciation for what is Cochon555. And my excitement over it finally making its way Austin, it’s like coming home! Today, Brady Howe is bringing Cochon555 to Austin, TX which has such a rich tradition around BBQ. Cochon555 started seven years ago and has built a dedicated following of both Chefs and devoted attendees by bringing together some of the countries best chefs and partnering with local artisan food producers, all with a focus on craft foods, drinks, and preservation of heritage breed pigs.
This year’s competition is focusing on Heritage BBQ (perfect for Texas) and the line up of Chefs are familiar with nose-to-tail cuisine and it will be exciting to see what each Chef does for each of the six dishes. Competing chefs include Daniel Olivella of Barlata, Ned Elliott of Foreign & Domestic, Dustin Harvey and Paul Qui of East Side King, Justin Yu of Oxheart (Houston), and Mat Clouser & Zack Northcutt of Swift’s Attic. Each chef will be given a 200 pound heritage breed pig to create six dishes for a crowd of pork-loving enthusiasts. Host Executive Chef Thomas Riordan of W Austin will lead the panel of 20 respected judges in selecting Austin’s “BBQ King.”
